Bananas Skins with Black-Eyed Peas

  • 4 green Banana peels
  • 1 tsp. of Turmeric
  • Salt
  • 2 tsp. of Coconut oil
  • 1/2 black eyed peas
  • 1/2 a tsp. of Mustard seeds
  • 2 tbsp. of unsweetened grated Coconut
  • Juice of 1 Lime

Start off by chopping the peels into small pieces and boiling them in water. In the meanwhile, add some turmeric and a pinch of salt and add a few drops of oil in the water, so you can prevent sap from sticking to the pot. As soon as the water reaches boiling point, let it simmer for some time until the banana peels are tender, before draining and reserving the water for a later use.
