Coconut Lime Bread (Gluten & Dairy Free)

If you’re focusing on smell and taste, on being present with what you’re creating, that act of mindfulness in that present moment can also have a result in stress reduction.”

Overall, any activity that captivates your whole attention, especially if it’s simple and repetitive, has calming, and meditative effects.

Just because cooking stimulates the senses, and increases feel-good endorphins, studies have shown that it can be a potent therapeutic activity that stimulates our mindset.

 “Baking for others can increase a feeling of wellbeing, contribute to stress relief and make you feel like you’ve done something good for the world, which perhaps increases your meaning in life and connection with other people.”

Julie Ohana, a licensed clinical social worker and culinary art therapist, adds:

“In many cultures, in many countries, food really is an expression of love, and it’s actually beautiful because it’s something we really all relate to. I think it could border on an unhealthy issue when it replaces communication in the traditional sense, but if it’s done along with communication, it is absolutely a positive and really wonderful thing.”

Gluten & Dairy-Free Coconut Lime Bread 

Ingredients

  • 2 eggs, room temperature
  • 1 1/4 cups coconut milk
  • zest from 3 limes
  • 1 ¼ cup finely ground almond flour plus two tablespoons
  • ¾ cup tapioca starch
  • 1/3 cup coconut flour
  • 2 teaspoons vanilla extract
  • 1 1/2 cups flaked coconut
  • 1 cup coconut sugar
  • 2 teaspoons baking powder
  • 6 tbsp melted coconut oil
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt

Lime Glaze

  • 2–3 tablespoons fresh lime juice
  • 1 cup powdered sugar
  • zest from 1/3 of a lime

Bread Instructions:

Preheat the oven to 350 degrees Fahrenheit. Grease a 9 x 5 loaf pan with coconut oil.

Mix the coconut milk, eggs, vanilla extract, and lime zest in a medium bowl, and set aside.

Using a mixer on low speed, mix the almond flour, tapioca starch, coconut sugar, flaked coconut, coconut sugar, baking powder, salt, and cinnamon.

Then, pour the egg mixture into the dry ingredients, and mix well. Add coconut oil, and mix again.

Pour the batter into the loaf pan, and bake for 60–75 minutes.

When done, leave it to cool, and make the lime glaze.

Lime Glaze Instructions:

Mix the lime juice and powdered sugar in a smaller bowl, and drizzle it over the bread.

Sprinkle with lime zest, and get ready for a fascinating dessert!
